Any good MOT garage would be able to give you an "engineers report", but have you tried looking for one of the several companies around now that specialise in completing unfinished kit cars? There are a number of them  around now and a look through the kit car press should give you one or two that you like the look of. They will give you a value as well, as they usually also buy unfinished projects and finish off kits, then sell them on. A good guide for a replacement value will be whatever they have been selling for in the recent past. Adverts from, say ebay or from the kit car press should give a "replacement value", and all the receipts you have and hours that you have spent on your baby will also give some credence to a valuation. Having said that, we as a club should be able to give you a reasonable valuation if a couple of other FT owners could have a look at it. I am sure a letter from the chairman or events organiser of the owners club, receipts and copy of recent adverts may well be acceptable to the insurance company, along with all the various angled pictures that they insist upon.
